Fesenjan فسنجان
A luxurious sweet-sour stew of duck or chicken with pomegranate molasses and crushed walnuts.
یک خورش مجلل شیرین-ترش از اردک یا مرغ با ملاس انار و گردوی خرد شده.
Ingredients مواد لازم
- 1 whole chicken, jointed, or 4 duck legs
- 300g walnuts, finely ground
- 4 tbsp pomegranate molasses
- 1 tbsp sugar (adjust to taste)
- 1 large onion, finely chopped
- 1/2 tsp cinnamon
- 1/4 tsp cardamom
- 1/4 tsp turmeric
- Salt and pepper
- 2 tbsp oil

- Toast ground walnuts in a dry pan for 5 min until fragrant. Do not burn.
- Brown chicken/duck pieces in oil. Remove and set aside.
- Sauté onion until deeply golden. Add turmeric, cinnamon, cardamom.
- Add toasted walnuts and 2 cups water. Simmer 15 min.
- Add pomegranate molasses and sugar. Taste and balance sweet/sour.
- Return poultry to pot. Simmer on low heat 1–1.5 hours.
- The sauce should be very thick and dark mahogany in colour.
- Serve with white polo (plain rice).

Fesenjan should be deeply flavoured and complex. If too sour, add sugar. If too sweet, add molasses. Duck gives a richer result than chicken.
